This way the cutlets will be more tender, will cook faster and will hold their shape better. If you dont have a steamer, you can cook the dish in a flat colander placed over a vessel with boiling water, or simply in a frying pan with a small amount of liquid.

Check the readiness with a wooden toothpick or match - when the pie is easily pierced, and the splinter comes out almost dry, it's time to take the dish out.
